MINI ONION SAMOSA RECIPE

Mini Onion Samosa Recipe @ treatntrick.blogspot.com

A favorite in our household, these savory bites are filled with curried onion and shallow fried.

I have made this Mini Samosa  in the past and now craving to eat them now. This time. I choose red onion to be stuffed in my samosa.

Make my Mini Onion Samosa smaller than the regular ones, it was just nice for one bite.  Feel free to vary the size by dividing the dough into lesser balls for bigger samosa.  Also used a combination of plain flour and whole wheat flour  that yield a slightly darker shade than  the normal samosa.

The onion stuffing was seasoned with chili powder to add some punch  but you can decrease of increase according to your tolerance.

As you know. regular samosas are deep fried but I prefer to shallow fry them.  This does not effect the taste of this Mini Onion Samosa at all, they are still turned awesome.

Come, enjoy these bite sized beauties  with a cup of your favorite drink.

HEALTHY BANANA BUNDT BREAD RECIPE

Healthy Banana Bundt Bread Recipe @ treatntrick.blogspot.com

Healthy Banana Bundt Bread  was made without oil or butter but still so moist and delicious.

If you're a regular visitor of my blog, you would notice, I have baked more than a dozen of banana cake/bread with slight variation on the ingredients used.

Stumbled upon this recipe while browsing Facebook.  Am eager to try it out since it uses yogurt and eggs to moisten the batter.

The original recipe uses 1/3 cup of honey but I have replaced it with half a cup of brown sugar.  This amount is just perfect for us. You can add more if you like it sweeter.

Am so glad, Healthy Banana Bundt Bread turned out incredibly fluffy and moist,   Less then 24 hours, it was almost gone, my family really love this bread.

BRAIDED BREAD RINGS RECIPE

Braided Bread Rings Recipe @ treatntrick.blogspot.com

These rolls are made with sweet bread dough, shape into  long rope of 12 in folded into 2 and braided,

After browsing You Tube, I came across a bunch of gorgeous rolls with different braiding techniques. They used no special gadget but simply turning the dough by braiding and twisting. I borrow that idea to shape my Braided Bread Rings.

I was pleasantly surprised to see, how easy to turn your dough into something beautiful by looking at those videos.

For the dough, I used my trusted  Braided Masala Bread recipe or use your favorite bread recipe.   If sticky, do not be afraid to add a bit more flour.

Sometimes Braided Bread Rings do become a little squished but overall the results  are simply stunning.

This simple chocolate cake is totally made without  milk, eggs or butter and no mixer is needed.  .

You would be surprised that this Eggless Chocolate Cake 2 turned out deeply flavored, moist and fluffy.

It all started by bringing  water, oil, sugar. cocoa power  to a boil. Allow to cool a bit then add the rest of the ingredients.

Eggless Chocolate Cake 2 was an excellent choice for those with dietary restrictions. It  was such a winner!  I felt no need for icing the cake but this is entirely up to you.

PERFECT BANANA CAKE RECIPE

Perfect Banana Cake Recipe @ treatntrick.blogspot.com

The best banana cake that was moist and came out beautiful.

As you might notice, I have baked banana cake regularly be it plain,  contains fruit or chocolate ones and now adding another fantastic recipe called Perfect Banana Cake.

Full banana flavor, so moist, just the right amount of sweetness and the easiest to make.

Perfect Banana Cake was baked using varied temperature.  At first, I baked at 180 C for 15 minutes on the lowest rack then transfer the pan to sit on middle rack for 45 minutes or until a skewer inserted comes out clean.

Baked the cake on lowest rack since I love the bottom to be well browned.

JAPANESE COTTON CHEESECAKE RECIPE

Japanese Cotton Cheesecake Recipe @ treatntrick.blogspot.com

A soft and wonderful cake loaded with cream cheese and eggs  cooked in a hot water bath method.

After my successful attempt in making Butter Cheesecake, am eager to try this Japanese Cotton Cheesecake recipe.  It uses egg separation method and bakes in hot water bath.  This procedure ensures a gentle and uniform heat around the food.

It is much easier to separate an egg if it is chilled as it was slightly thicker than a regular egg.

My project to make Japanese Cotton Cheesecake went smoothly but I have one small problem though. My cake top did not turn golden brown  as done by others but  the edges do despite shifting the pan on the top rack.   Don't understand why this happens?

This cake baked up wonderful, no air bubbles in the cake, has a good taste and quality.  Everyone asked  for a second slice.

TRICOLOR MARBLE CAKE RECIPE

Tricolor Marble Cake Recipe @ treatntrick.blogspot.com

Another butter cake project that has 3 color and swirled to get a marbling effect.

We're just entering a new year and I like to dedicate this post to my wonderful readers.  Wishing you a Healthy and Prosperous New Year!

You might notice that I deeply in love with  anything matble, be it dessert or bread.  For example the following recipes that I have tried:

Moist Marble Banana Cake

Chocolate Marble Bread

Marble Cake

This Tricolor Marble Cake made of 3 colors, green, red and plain. Not only colors but you can add any flavoring like strawberry, coffee, blueberry, pandan or lemon that suits the color of your choice. I don't have those so added only food coloring.

My Tricolor Marble Cake turned faint in color since I have used only 2 drops of the food coloring.  I think you should add little bit more to get vivid color.  Nevertheless it turned out rich, moist and delightful.

FRUIT CORNFLAKES BARS RECIPE

Fruit Cornflakes Bars Recipe @ treatntrick.blogspot.com

A combination of cornflakes and dried fruits makes these bars a wonderful treat.

It has been awhile I made breakfast bars.   Since my cornflakes are sitting idly in the cupboard. it is the right time to turn them into a delicious grab and go slices.

These  Fruit Cornflakes Bars  are so versatile, there are so many variations you can made from it.  Either add  fresh or dried fruit when mixing them,  I used  1 cup dried grapes and  1/4 cup of fresh blueberries or use a total of one and quarter  cup of fruit you have in hand..   You can even add chopped nuts like almond, walnut or pecan too.

These chewy, tender Fruit Cornflakes Bars are packed with tasty ingredients.

ZEBRA OIL CAKE RECIPE

Zebra Oil Cake Recipe @ treatntrick.blogspot.com

An easy but impressive  cake using oil that has two contrasting colors.

Zebra Oil Cake is similar with butter cake but used oil instead with two colored stripes.

I used my electric hand mixer to beat sugar and eggs on high speed until it turns fluffy, thick  and pale in color for about 5 minutes.

The batter is divided into 2, one portion leaves as it is while the other mix in the cocoa powder. Now is the fun part, layering the batter by alternating between the plain and chocolate one until  both batter have been used up.  You need not spread the batter, it would spread by itself.

Do you know the difference between zebra and marble cake.? Zebra Oil Cake has almost even stripes where else marble cake has uneven pattern by swirling around the batter to create a marble effect.

EASY LEMON YOGURT CAKE RECIPE

Ultra  moist and slight tanginess makes this cake a favorite for everyone.

Incredibly tasty and you just can't  stop at one slice! Easy Lemon Yogurt Cake uses freshly squeezed lemon juice and grated lemon zest.   It is  packed with delicious lemon flavor.

I used a wire whisk to beat  sugar and  eggs until pale and creamy or use your mixer to do the job.  Always love a simple recipe yet turned out wonderful.

You can ice the cake after it has cooled or pour lemon syrup on top while it is still warm.  Am not a fan of those so we have it as it is.

This Easy Lemon Yogurt Cake is the best lemon cake I have made in ages.  Even a couple of days later.  the last piece still tastes lovely.

This is a wonderful recipe for a yeast free bread using few simple ingredients you already have in your pantry.  No Yeast Braided Savory Bread is very versatile and so easy to make.

Since my family requested for a savory filling,  I used  curried green peas and potato.  You can vary the stuffing  depending on your preference either sweet or savory.

TANGZHONG SWEET BUNS RECIPE

Tangzhong Sweet Buns Recipe @ treatntrick.blogspot.com

A soft and fluffy sweet buns recipe using water roux (tangzhong) method.

Tangzhong Sweet Buns  is a basic recipe that can be transformed into honeycomb buns, pull apart bread, chocolate, cinnamon rolls or stuffed with either sweet or savory filling.

Before proceeding to bake this bread, prepare the tangzhong.  You need to cool the water roux before adding it to the dough.

These buns need to rise twice, one after kneading into smooth ball and immediately after shaping them.

If you intend to turn into honeycomb buns,  shape into a tiny ball and stuff with sweet or savory filling.  Place these balls in a concentric circles.  After baking, pour sugar syrup or butterscotch sauce on top if you're using a sweet filling.

As for cinnamon rolls, roll out the dough into a rectangle,  spread with butter, sprinkle with cinnamon brown sugar mixture evenly over the dough, leaving 1/2 in border all around,  roll up and cut into 1 in thick slices.

Tangzhong Sweet Buns  turned out fantastic, remarkably soft  and very flavorful.   Importantly the dough is also very manageable, very nice dough to work with.

STRAWBERRY CAKE NO JELLO RECIPE

Strawberry Cake No Jello Recipe @ treatntrick.blogspot.com

A homemade Strawberry Cake  No Jello and box mixes that was moist and a cinch to make.

Have been looking for strawberry cake  without gelatin all over the net but  can't find what I like. In the end, I used my regular cake recipe with slight adjustments.

This Strawberry Cake  No Jello can be baked in 8 in cake pan or bundt instead of loaf pan that I used.

Used fresh strawberry and did not puree  them  instead chopped them fine.

Accidentally, added a bit more of the liquid food coloring, I suggest you add drop by drop to obtain lighter color tone.

Baked this Strawberry Cake No Jello for first 30 minutes @ 180 C then reduce the temperature to 160 C and continue baking for another 10-15 minutes or until a skewer inserted comes out clean.  Apply frosting of your choice if desired.

Flat Top Banana Bread Recipe @ treatntrick.blogspot.com

This classic Flat Top Banana Bread is always a favorite, whenever I have over ripen banana,  this is the bread I used to make.

It uses one and half cup of mashed banana, yogurt and butter to produce a moist and divine banana bread.  It took 50 minutes to bake it at 180 C.

Easily turned this basic banana bread to the next level by adding chocolate chips, peanut butter, coconut or blueberry.  So, if you're craving for a sweet, warm and super easy treat,  this Flat Top Banana Bread is the best option.

As this bread was extremely moist, place the bread  in an airtight plastic container then store in a refrigerator after 24 hours

VEGAN HOMEMADE DOUGHNUTS

Vegan Homemade Doughnuts Recipe @ treatntrick.blogspot.com

A vegan and yeast free doughnuts for our tea time treat this week.   Found this recipe on Facebook.  It looks easy and quick to make.

These Vegan Homemade Doughnuts use vegan margarine and soy milk without yeast.   If you're not a vegan, you can use butter and fresh milk.

Original recipe calls for deep frying but I opt for baking instead.  Also did not coat them with sugar as we wanted a savory version.

The dough of these  Vegan Homemade Doughnuts are really sticky,  I added a tablespoon of flour to make it easier to shape by forming the dough into a ball, flatten it and make a hole with your floured finger or else roll the dough and use a doughnut cutter.

The doughnuts turned out very tasty despite they don't rise much as compared with  deep fried ones.  I think we need to add another teaspoon of baking powder if it is baked (original uses 1 teaspoon).

Vegan Homemade Doughnuts Recipe @ treatntrick.blogspot.com

VARIATIONS

Liquid can be replaced for fruit juice, you can even add chopped dried fruit.

For savory bread, add tomato juice instead of soy milk,  sun dried tomato may be added to the dough

Brush the dough with olive oil, sprinkle with sea salt  and oregano for foccacia flavor.

FANTASTIC APRICOT BREAD

Fantastic Apricot Bread Recipe @ treatntrick.blogspot.com

Always love quick bread for breakfast or in between snack.   This week  tried my hand baking this Fantastic Apricot Bread.

This bread can be baked with yeast but am not in the mood to knead or spend time  waiting for it to rise.   So chosen this fruit laden quick bread.

Before you start, chopped dry apricot into small pieces but fairly visible.  Soak them in water for good 30 minutes. Squeeze out the water. keep aside.

This Fantastic Apricot Bread was really sweet so it doesn't need any glaze at all.  Have seen a few recipes with less sugar but uses  glaze after it has been baked.  Which one do you prefer, less sugar with glaze or without?

This bread received  high marks from my family, we are expecting some guest for  couple of days, have planned to bake it again.

EGG CURRY PUFFS FROM SCRATCH

Egg Curry Puffs from scratch Recipe @ treatntrick.blogspot.com

It was a long time, I have make these curry puffs.  Presently, the store bought puffs are sky rocketing in price,  So it is time to make your own.

These Egg Curry Puffs from scratch are time consuming but worth to make.  They consist of two parts, the pastry and the filling.

Most popular filling was potato but I want to try something different that won't take much time to prepare.  I chose these Egg Curry Puffs, made with eggs, onion and spices,

Managed to shorten prep time for filling but important task are rolling, filing and frying them.  If you think this method was too much of hassle,  opt for a special mould that seal and crimp the edges well. But I still did it manually.

Be careful when adding ice water,   add little by little until it forms into a dough.  Find the pastry crispier than my earlier attempt where I did not add rice flour.

When frying these Egg Curry Puffs from scratch. make sure to use medium heat or else  they browned fast but inside still uncooked.  Do not crowd the pan, once it turns golden brown on both sides, remove and place on kitchen towel to drain.

AMAZING YOGURT CAKE

Amazing Yogurt Cake Recipe @ treatntrick.blogspot.com

Thinking hard what to bake this week,  am torn between baking  a cake or bread.  At the moment, I only have few cups of natural yogurt in the refrigerator.

Decided to bake this Amazing Yogurt Cake that was ultra moist and a snap to make.   The yogurt not only cut down the fat used but also moisten the cake.

In case  you don't have a  plain yogurt,  a flavored ones work just fine.   This Amazing Yogurt Cake can be customized in many ways like adding a cup of diced blueberries, raspberries, strawberries or other fruits as well.

I use canola oil for this recipe.  You can use almond oil, peanut oil or any vegetable oil or even replace oil with melted butter.

Why it is called "amazing"?  Simply because it uses staple ingredients from the kitchen and  made without a mixer but using a whisk yet it  produces a moist, tender and scrumptious treat!
